To make the filling for this cake you will need: 2 apples, 250ml of milk, 22g of corn flour, 50g of sugar, 2 eggs, lemon peel, cinnamon stick and jam.

For the shortcrust pastry you need: 250 g of flour 0000, 125 g of cold butter cut into cubes, 1 egg, 2 tablespoons of water or milk (may or may not be needed), 2 tablespoons of sugar and a pinch of salt.

PROCEDURE OF THE BROKEN DOUGH:

1. In a bowl, place the flour together with the cubes of cold butter.

2. Mix well with your hands until both ingredients are integrated and we have a sandy consistency. We check well so that there are no large pieces of butter left unmixed.

3. Now add the egg, a pinch of salt and, if we are making the dough sweet, the sugar.

4. We knead just enough so that all the ingredients are integrated. If it is very dry, add a little water (spoonful by tablespoon) until we see that it compacts easily. We form a ball and store it in the fridge in a closed container or wrapped with plastic film for at least half an hour or overnight.

5. At the moment of using it, we take the dough out of the refrigerator and stretch it with a kitchen roller until it forms a circle of the right size and thickness to cover the mold. Sprinkle several times with flour while we stretch it and watch that it does not stick to the mold. Prick the dough with a fork so it doesn’t puff up and bake in a preheated oven at 180°C for 15 minutes.

FILLING PROCEDURE:

1. To start we must put the lemon peel, the cinnamon stick and the milk in a pot, bringing it to a boil.

2. In a bowl add the cornmeal and sugar. We mix. Later we add the infused milk and repeat the process. Add the two beaten eggs and continue mixing all the ingredients.

3. Strain the mixture obtained using a strainer over a saucepan and leave it over low heat until it thickens, stirring constantly.

4. Pour the resulting pastry cream over the shortcrust pastry.

5. Peel the apples and cut them into slices.

6. Next, place the apple slices on top of the pastry cream.

7. Bake the apple pie for 20 minutes at 190°C

8. Once we have the baked apple pie we can brush it with some jam or syrup.
