Ingredients

300 grams of Cornstarch, 200 grams of flour, 1/2 teaspoon of baking soda, 2 teaspoons of baking powder, 200 grams of butter, 150 grams of sugar, 3 egg yolks, 1 teaspoon of vanilla essence, 1 teaspoon of grated of lemon, 200 grams of almonds or almond flour, 200 grams of bitter cocoa powder, 200 grams of grated coconut to coat and 500 grams of dulce de leche to fill.

Instructions

1. In a bowl, beat the butter with the sugar until you get an ointment, add the vanilla essence, the lemon zest and beat for a few more seconds.

2. Add the yolks one by one, mixing everything well.

3. Finally, add the dry ingredients, integrating them with a spatula and without kneading.

4. Let cool for a few minutes, stretch ½ cm thick on an allowance sprinkled with cornstarch and cut the alfajor tapas.

5. Place the tapas on a plate and cook over moderate heat for 15 minutes without letting them colour.

6. Assemble the alfajores with the dulce de leche and pass them through grated coconut.

Version with tapas with almond flour

1. Process the almonds until they are sandblasted.

2. Carry out the same procedure as for the traditional cornstarch alfajores, replacing 200 g of flour with 200 g of almond flour.

Version with tapas with chocolate / cocoa

1. Carry out the same procedure as the traditional cornstarch alfajores, replacing 200 g of flour with 200 g of sifted bitter cocoa.
