Homemade pancakes are the richest accompaniment for your breakfasts or snacks. Today we are going to teach you how to prepare the fluffiest soufflé pancakes you have ever tried. Next we tell you the step by step of this recipe for 3 people. For this you will need: 2 eggs, 20 milliliters of milk, 30 grams of flour, 1.25 milliliters of vanilla extract (optional), 75 grams of sugar and a few drops of oil.

To decorate:

Butter and honey or the toppings that you like the most. (impalpable sugar, fruits, chocolate chips, liquid caramel, among others)

Step by Step:

1.Separate the yolks from the whites. Crack the two eggs and separate the yolks from the whites, putting them in separate bowls.

2.Start making the dough. Add the milk to the bowl of the yolks and beat them until they are integrated with manual rods. Also add the flour, sifted, and beat until you achieve a dense and homogeneous mass. Add the vanilla extract and beat again.

3.Whip the egg whites. Start whipping the whites, with electric rods. You should add the sugar to the egg whites in three batches: when they start to bubble, add 1/3 of the sugar and beat. When the egg whites are semi-whipped, add another 1/3 of the sugar. And when they start to form peaks, the last 1/3 of the sugar. Beat until the whites are stiff.

4.Mix the two preparations. Add 1/3 of the meringue to the bowl of yolks and mix with enveloping movements, so they do not lose volume. When the two masses are integrated, pour them into the meringue bowl and mix again with encircling movements.

5. Cook the pancakes. Transfer the resulting dough to a pastry bag with a wide nozzle. Grease a frying pan with a few drops of oil and heat it over low heat. Form three pancakes and add three teaspoons of water to the pan, strategically so that they do not wet the pancakes. Cover the pan and cook for 5 minutes over low heat.

6.Turn the pancakes over. After 5 minutes, carefully turn the pancakes and cook them 5 more minutes on the other side, with 1 teaspoon of water and covered.

7. Decorate and serve. Transfer the pancakes to a plate, add a little butter on each one and drizzle with honey. Or with the topping that you like the most (although alone, without anything, they are also delicious).
