Soft and with a very sweet filling. Ideal to accompany the morning coffee or during the afternoon snack. A piece of advice, if you want you can double this recipe and make a few more because they will disappear in the blink of an eye.

Ingredients
Filling: 100 grams of cream, 100 chocolate coverage
Dough: 135 grams of 0000 flour, 15 grams of bitter cocoa, 100 grams of butter, 50 grams of powdered sugar and 1 egg yolk.
Filling procedure
Heat the cream and before it reaches a boil, remove from the heat. Add the chopped chocolate and mix until creamy and let cool.
Let it cool and thicken at room temperature, if you keep it in the fridge it will harden.
Procedure for the dough
Sift the flour, cocoa and powdered sugar.
Process one lap in a food processor until integrated. Add the cold butter and continue processing. Finally add the yolk. (can be done by hand too).
Roll out the dough on parchment paper and allow to cool for 20 minutes.

Cut into circles and bake 10 minutes. 30 caps come out, to each of those caps make a circle in the middle and fill with the ganache.
Makes 15 cookies.
