basil pesto


  • • 2 cups basil leaves
  • • 2 garlic cloves
  • • 1/2 cup of walnuts
  • • 1/4 teaspoon salt
  • • 1/2 cup olive oil
  • • 3/4 cup freshly grated hard cheese such as Parmigiano-Reggiano or Pecorino-Romano cheese, or a combination of the two

The classic Bolognese

  • • 100 grams of fresh mushrooms
  • • 1 medium onion
  • • 200 grams of cooked ham
  • • 200 ml of milk cream
  • • 2 tablespoons of butter
  • • Grated white cheese, salt and pepper to taste

How is it done?

  1. 1. Chop the onion and ham into small cubes and the mushrooms into thin slices.
  2. 2. Heat a skillet over medium heat, add the butter and when it starts to melt add the onion. Sauté it until transparent.
  3. 3. Then add the ham and mushrooms and cook for about 5 minutes.
  4. 4. Now put the milk cream and let everything cook for 10 minutes over low heat. Add salt and pepper to taste.
  5. 5. At this time you can add more cream if necessary or, if you want a more liquid sauce, you can add some milk. If, on the other hand, you want something thicker, let a little of the liquid evaporate.
